Mashed sweet potatoes
One of the most versatile vegetables, a vitamin-A superfood, sweet potatoes can work their way into any recipe, sweet or savory. Today I’m sharing a favourite side dish of mine, mashed sweet potatoes with honey.
500g/ 1.1lb sweet potatoes
2 Tbsp butter
2 Tbsp honey
freshly ground pepper
Bring a deep pot of water to a boil and then add in the sweet potatoes. After approximately 25 minutes they should be tender enough to blend. Use a fork and pierce through to make sure.
Remove the sweet potatoes with a slotted spoon and place them on a colander. Allow 10-15 minutes for them to cool, put your single-use gloves on and slide them out of their skin.
Add in all of the ingredients to a blender and blend until smooth. Make sure you first pour in the milk and the butter before you add the sweet potatoes. This will allow the mix to properly liquify without harming the blender’s blades. You will have to regularly stop and taste and then season accordingly.
Simple? Serve warm and enjoy!
