A truly scrumptious Greek-inspired pie bursting with colourful aromas of mushrooms, red peppers and kasseri cheese.
Simply known as manitaropita in Greek this crunchy dish is surely not to be missed. So versatile and filling you can have it for breakfast, brunch, lunch or dinner.
An old favourite of mine where the combination of protein-packed mushrooms, antioxidant red pepper and distinctive kasseri cheese really does make a difference.
6 filo pastry sheets
1 cup of olive oil
500g mushroom of choice
1 onion (chopped)
1 handful of spring onions (finely chopped)
1 red pepper (cubed)
100g smoked ham or bacon (sliced)
200g Kasseri cheese (use mild cheddar as substitute)
½ cup milk
