Honey and mint cake with chia seeds, rosemary and no sugar mint syrup
A delicious combination of honey, mint and rosemary comes together in this sweet, moist and dense honey and mint cake.
Packed with nutrient dense chia seeds, I have added them in not only for the extra crunchy texture they give, but because they are loaded with fibre, omega-3 fatty acids and powerful antioxidants. You can add chia seeds in pretty much everything – puddings, smoothies, salads even pasta!
This honey and mint cake is so sweet, but it’s not your typical dessert, in the sense that you wouldn’t necessarily expect a cake without chocolate or caramel but made with rosemary to taste so delicious and fulfil your sweet-tooth cravings!

200g clear honey
180g self-raising flour
2 Tbsp fresh chopped mint
2 Tbsp chia seeds
3/4 tsp dried rosemary
3/4 cup water
1.5 cups fresh mint leaves
2 tsp stevia liquid
1 Tbsp clear honey
